I have a major #smoothie obsession and in going on a major health kick so I’m having #healthy smoothies every day. I’ve had this one everyday this week. #spinach, frozen #berries, frozen #mango, frozen #banana, #almondbutter, #chocolate #almondmilk, #water. OMG it’s amazing

#Healthy #vegan #chocolate #peanutbutter #fudge with a side of oatmeal for breakfast! I swear it’s healthy! ZERO added sugar! For details and the full recipe, check out Chocolate Covered Katie (one of my favourite blogs for healthy dessert recipes).
Chocolate Peanut Butter Fudge:
- 2 T peanut butter
- 2 T coconut butter or homemade coconut butter (I tried and failed to make my own so I used coconut oil and it worked)
- 2 T cocoa powder (10g)
- 80g very-ripe banana (1/2 a medium banana)
- 1/16 tsp salt (more if using unsalted pb)
- optional: feel free to add a little sweetener if your bananas aren’t ripe enough
Combine all ingredients in a food processor or blender (Katie uses the Magic Bullet). Scoop into a container or even a little pie pan, and put in the fridge or freezer so it will firm up. (Alternatively, you can eat it soft, like frosting!)
My roommate recommended that I try #vitasoy when she saw my #sogood. #BEST #CHOCOLATE #SOYMILK I EVER HAD!!! (Taken with instagram)
What an accurate product name! #chocolate #soymilk is #sogood (and addictive) (Taken with instagram)
CHOCOLATE CHIA PUDDING
¼ c chia seeds
3/4 c vanilla rice milk or your favorite non-dairy beverage
2 tbsp cocoa powder
1 tsp agave nectar or maple syrup
½ tsp vanilla
I’ll admit, like almost all my recipes, I got this one off a fellow blogger who was kind enough to post it: http://hellyeahitsvegan.com/
I added a packet of Stevia to make it a bit sweeter to satisfy my perpetual sweet tooth. It’s actually pretty yummy, but a bit crunchy because even though the chia seeds absorb all the liquid (that’s how it becomes pudding-y), they still have a bit of a crunch to it (kind of like tapioca with a tiny seed in the middle).
